Mango Pancakes With Rum Syrup

Given this past weekend was a three-day weekend, yesterday marking the holiday, I felt a leisure Sunday was order. Centered around family the day would be filled with food, laughter, and of course liquid libations. Early that morning, before tucking in to Andros stone crab later in the day, I followed this basic recipe and made old-fashioned pancakes. At last minute, on a whim, I decided to gently knead-in chopped ripe-off-the-tree-mangoes by hand. Then topping the tropic infused stack with a rum syrup which I made by melting together 1/2 cup of sugar with 1/2 cup of rum and refrigerated before using.
