Cream Cheese Filled Banana Bread

Unlike the soursop or the mango, bananas are in season year round in the islands. Often times a basketful of the crescent shaped fruit sits atop our dining table, serving both as decoration and reminding us to eat our daily serving of fruit. Even though this recipe calls for far different ingredients than those listed in the one passed down by grandmum, the hand-whipped cream cheese offers an layer of unexpected flavour. Additionally, the use of coconut oil in place of butter makes for a healthier altnerative and lends to less time spent in the kitchen cleaning up. A necessity in any home, but especially this one, given I am known for leaving dishes to “soak”.
